There are both mild and hot versions picante or caliente -- the package label will tell you -- but all are slightly salty and many also have a smoky flavor from the paprika. Some of the best dry chorizo is made by La Palacios, which is imported from La Rioja in Spain, and there are other local and regional brands -- both made in the US and imported from Spain. Local producers are increasingly making their own version of this traditional sausage, adding the distinctive spices and flavorings -- chile, garlic and paprika.
There is also a semi-cured chorizo that has the intense flavor of the dry but it must be cooked before eating. The meat mixture can also be taken out of its casings and cooked in smaller amounts, as patties, or rolled into small meatballs. When made with other ingredients in recipes, chorizo is a wonderful addition to chili, it can take the place of other sausages in classic dishes like jambalaya, adds flavor to huevos rancheros or a meatloaf mix, or is a key part of the classic combination of chorizo, egg and potatoes. Dry chorizo is also versatile. You can add it to a plate of tapas, alongside a piece of manchego cheese or with briny olives. It is included in most paellas and other iconic Spanish dishes, including fidelios, a dish similar to paella but made with noodles instead of rice.
Here is a recipe for paella from La Tienda, an excellent source for Spanish ingredients.

The relative lack of rendered fat produced by this chorizo makes it a less-than-ideal option for some dishes, but its balance opens up a world of possibilities.
Or, go a different direction and use the chorizo in a shakshuka, the classic Israeli Egg Dish. The cross-cultural mashup of Mexican and Israeli will look sophisticated on you. The signature pork product was classic in style with a somewhat loose texture and flavor profile that is well balanced between acid, chile, salty, sweet, and savory.
The texture of the beef chorizo was more solid than that of the pork but with an emphasis on the vinegary notes. While the chile flavors were there, when you looked for them, they were slightly muted. The color of the soy chorizo leaned heavily toward brown.
Indeed, if we were told this was a vegan sausage other than chorizo, we would have absolutely no trouble believing that to be true. They demonstrate that chorizo does not need to be made from animal flesh to be good.
What is Chorizo? The word might have caught your eye on a brunch or dinner menu, in a recipe, or while perusing the aisles of your preferred grocery store. But what is Chorizo exactly, and how is it made? Chorizo appears to be sausage at first glance. While there are various kinds of Chorizo, they assert that the two most well-known and frequently seen variants are Mexican Chorizo and Spanish Chorizo.
You can get fresh, uncooked Mexican Chorizo that is either ground or in a casing. They claim that dried or cured Spanish Chorizo is sold in containers. Spanish Chorizo is available in spicy and sweet flavors and can be smoked or unsmoked. Due to the combination of spices needed to make both forms of Chorizo, both are typically reddish. Sliced Chorizo — Slicec chorizo is Spanish Chorizo that has been cut and is ready to eat. This type of Chorizo is often used as part of a tapas platter or on top of pizzas. Spanish Chorizo makes good use of paprika , which gives it a bright red color and makes it taste deeply smoky.
While it has a similar flavor, the texture is slightly softer and more like normal meat sausage. This means that it must be kept refrigerated and always cooked before eating. No matter how careful you are, sometimes unexpected things might still happen, and preserving Chorizo is no different. There is no way to predict when anything will occur. There are some notable signs for you to notice whether your Chorizo is still edible or not: Pay attention to the appearance to see if any significant changes in color or mold appear on the surface. Try to smell it and find any strange odor. Usually, spoiled Chorizo will be marked with a sharp and aromatic scent.
You feel some odd flavor when eating them. If you notice any of these changes on your chorizos, you should get rid of them, for they might already have spoiled. How Long does Chorizo Last? Does Chorizo Go Bad?
This is to preserve the natural stages and flavor of chorizos that other environments may affect. Keep Chorizo in a tightly sealed container, vacuum it if you can, and put them in a cool, dry place. You can also leave the chorizos in their original package. The Kitchen cabinet, pantry, cupboard, or anywhere that is clean and away from direct sunlight are the best choices. Semi-cured Chorizo should be consumed within a few days after opening the package.
Otherwise, you should put them in the fridge. Fresh Chorizos are best consumed immediately after you buy them. They are not meant to be kept at room temperature for long. Refrigerating Refrigerating is the only method that is suitable for every type of Chorizo. This can apply to both cured and fresh Chorizo. Keep your Chorizo in the packages for the best storage or put them in a tightly sealed container. Keep them separated from other foods. Consume them within a week if you have opened the package or sliced them up Freezing Freezing is the go-to choice when you have a relatively large amount of chorizos and want to keep them for long-term usage. This method can apply to any type of Chorizo or meat product as a whole.
For this method, there are several steps that you should take note of in order to do it right: Step 1:Wrap Them With Paper Towels. Doing this will preserve the moisture content and prevent them from getting too dry as it will be tough to eat. Step 2:Tightly Seal Your Chorizos. Put your chorizos in freezer storage bags. Vacuum-seal them if possible, for this is the ideal way to keep the cold air away from your sausages. If you have a large quantity, putting all of your wrapped chorizos into a larger airtight container will help you to manage them easier. Step 4: Place them in the freezer The only thing left to do now is put the chorizos in the freezer, and they will stay good for 12 months. Whenever you want to thaw them for use, just do it as usual like every other food. A simple hack for storing Chorizo, but it will make your life much easier.
In every way, vacuum-packed always do better than a normal package. You should not refreeze Chorizo, as it will damage the cells of the meat, thus affecting the quality.

We have a great recipe for that here. How to make chorizo and sweet potato breakfast hash Start by heating two tablespoons of oil in your cast iron skillet over medium heat. Cube your sweet potato to your desired size. Remember: the smaller the cubes, the faster the cooking time. In between stirring, make sure to flatten out any mounds that form. The goal is to make sure that all of the cubes are making contact with the pan. Stir occasionally, until the sweet potatoes have softened slightly and have started to pick up just a hint of color. Now you can add in your chopped scallions. Let those fry for a little bit until you start to get a few crispy ones. If at any point the bottom of the skillet starts to look particularly dry, feel free to add a little more oil to keep things frying. With the potatoes tender and scallions starting to crisp, you can crumble in either your chorizo or soyrizo — whichever one you are using.
Chorizo con huevos is often used in breakfast burritos, tacos, and taquitos. Another popular Mexican recipe is fried chorizo combined with pinto or black refried beans. This combination is often used in tortas as a spread, or as a side dish where plain refried beans would normally be served. In Mexico and the southwestern United States chorizo is also used to make chorizo con queso or choriqueso , a popular appetizer consisting of small pieces of chorizo served with melted cheese and eaten with small corn tortillas or tortilla chips. Central America and the Caribbean edit Salvadorean-style chorizo In Puerto Rico , Panama , and the Dominican Republic , chorizo and longaniza are considered two different types of meat. Puerto Rican chorizo is a smoked, well-seasoned sausage nearly identical to the smoked versions in Spain. Puerto Rican and Dominican longanizas have a very different taste and appearance. The seasoned meat is stuffed into a pork casing and is formed very long by hand. It is then hung to air-dry.
Longaniza can then be fried in oil or cooked with rice or beans. It is eaten with many different dishes.

Kate 6 months ago This was as good as the amazing green chorizo tacos I had recently during a street market tour in Mexico City. I used a little less salt and added some chopped olives, as those were in the tacos in Mexico, and some chopped capers just for fun. So much flavor! Add spinach powder to make them authentically green.

Vinegar is also added when making the chorizo. Lastly, Mexican chorizo is usually sold fresh and needs to be cooked before eating. Does Chorizo Freeze Well? The drier the chorizo, the less of a good idea it is to freeze it. So, the chorizo that freezes the best is fresh chorizo.
The next best variety to freeze is semi-cured chorizo. Storing it in the fridge is the better choice as this stops it from becoming too dry. You safely keep chorizo in the fridge for up to 6 months. In summary, for the Spanish variety, the fresh or semi-cured versions freeze the best as freezing it will keep it soft. The Mexican variety almost always freezes well as it usually is sold fresh. How to Freeze Chorizo You will need to follow some different steps depending on the type of chorizo it is. The approach will be different for Spanish fresh, semi-cured, cured or Mexican only fresh Chorizo. This is what you should do: Put them in freezer-safe Ziploc bags and remove as much air as possible — vacuum sealing is the best. Wrap it loosely with paper towels — this helps to keep moisture in.
Place it in the freezer. The quality will be good for up to a year. Keep as much moisture in as possible is key to preventing the meat from becoming too dry, especially if it will be stored for a longer period of time.

White molds The formation of a white, powdery mold penicillin species on the outside of the chorizo is completely harmless and can be expected. If the hairy mold is white, and not green, usually wiping it down right away with a vinegar solution should be enough to save your batch. A couple of weeks into the process, a white, powdery mold began to form. I wiped it off with a vinegar solution. Green and Blue molds The formation of powdery green and blue molds is a lot more contraversial. There is a lot more fear when it comes to hairy green and blue molds. Some are brave enough to wipe them off as soon as they form and hope for the best.
Others, are more cautious, and throw the affected sausages away. My chorizo was never affected with hairy green mold, so I never had to make the call myself. Black mold is said to form in sausages that are curing in areas with too much humidity and not enough air flow. Too much humidity can lead to possibly toxic molds, but too little humidity can also be bad. I also suspect that with thinner sausages like chorizo, which usually use a thinner diameter casing, that you are less likely to have this problem than when curing thicker meats and sausages. In any case, if you were to end up with a chorizo that was very dry on the outside, and quite a bit softer on the inside, you can normally fix the problem by wrapping the sausages in wax paper or plastic, and leaving in the refrigerator for a few days. When is my dry cured homemade Spanish chorizo ready? I like mine in the later, dryer stages, so I rarely weigh it anymore.
I check on the chorizo by squeezing it, waiting for it to feel firm to the touch before cutting into it. In this first picture, you can see my chorizo at an earlier curing stage. It still should feel firm when you press on it and cut into it. You can eat the chorizo with the casing on, or peel it off before eating it. A week or two later, it has hardened more, and is a bit darker in color.
